Nutritarian Soup
Solids;
beans, carrots, zucchini and yellow squash, tarot and yucca roots, mushrooms, (wild, black & brown rice), (red, yellow & green bell peppers), cabbage, hominy.
Broth mix;
tomatoes, ginger, sweet potatoes, beets, radish, onion, garlic, seaweed, kale, spinach, watercress.
Prepare everything ahead of time. Including all peeling and chopping. I boil all vegetables srperately to get just the right amount of firmness since they all have different times. Once all solids are boiled and put them aside. Then with a very high powered blender I blend tomatoes and start adding all the greens garlic, onion and mushrooms. Plenty of tomatoes which consists of most of the liquid, about 75% and 25% water. After all blended put into a large pot add water and bring to boil. Then add all solids and bring to boil again. Spice to preference, I add very little salt, tumeric, paparika, pepper and any other spices that can mask the strong flavors. I make 4 cups of mixed rice and add art the end, it really helps mask the strong flavors. Done! Enjoy!

Hi Dorothy, it was a labor of love. Took 3 days to make. First day wash and dry everything and started peeling & chopping. 2nd day continue chopping and cooking. Third day making broth and start mixing everything together and adding spices. It is vitamin and mineral packed. I started making this over 10 years ago.
